Robbie Barroll’s Christmas Fudge Recipe

Hey back when we worked in corporate radio, we always knew when the holidays were near because our coworker, Jim Barroll, would bring in his wife’s legendary fudge. You had to beat the guys from the news department and the sports station to it, but it was always worth the fight. We reached out and asked, and Robbie Barroll graciously agreed to share her fudge recipe. She says, “don’t make it on a humid day, and don’t try to cut the recipe in half!”
Once you’ve had Robbie’s fudge, you won’t even understand why anyone would try to cut the recipe in half hahaha!

Ingredients:
4 cups sugar
1 stick butter
1 tall can evaporated milk
12 oz. Semi-sweet Chocolate Chips
12 oz. Milk Chocolate Chips
2 oz. bitter chocolate [Do not deviate from the amounts of the 3 chocolate types] 1-1/2 tsp. vanilla
10 oz. mini-marshmallows
1-1/2 cups favorite nuts (pecans are preferred)

Over medium heat (not high), mix sugar, butter & evaporated milk until boiling – stirring constantly.
Cover pot and boil for exactly 5 minutes – without stirring!
Remove top – blend in marshmallows, stirring gently, until melted.
Stir in each package of chocolate separately, softly stirring each one until melted.
[Again, do not use high heat as chocolate will seize up] Gently stir in vanilla and nuts until well blended.
Pour into a large, buttered pan (roasting pan preferred).
Cover with aluminum foil and place in cold oven or in some other cool, out of the way spot (2-3 hours).
—Makes 90 to 100 squares–

*** Important instructions ***
DO NOT TRY TO CUT THE RECIPE IN HALF – it simply won’t work.
Don’t try this recipe on a humid day. It will not set up – but you can pour it over ice cream ��
