  • Back in the Nixon era a small cookbook was published using commodity ingredients and featured low cost meals. Written by Sophie Levitt , it was widely distributed and can be relevant today, IF people would spend the time to cook from scratch.
    At 84, I have cooked for many peoples over the years and learned to cut costs at the grocery.
    My tip, popcorn s the only snack food kids need.
    And that is not from the microwave, use an air popper from a thrift store. Sugared cereals are a no-no and don’t even go down the drink or snack aisle .
    I recently made my first ice cream birthday cake and it tasted as good as the $25 version.
    Study and experiment!

  • As a child I lived in foster homes. Many a time Spam was served. I HATED it. It had the slimy gel surrounding it, it was cold and very just yuk. Did I say how much I HATED it. As adulthood, three children under the age of 4 and looming financial responsibilities ganged up on me I learned to be frugal with money. So I began to buy foods that would fill the belly and be cheap. I became a coupon queen, dollar store junky and a wiz at making cheap food appealing to small children. I became a reluctant friend with SPAM. I had a Pilipino neighbor who cooked with it all the time. My kids favorite was sliced government cheese, fried spam on saltine crackers. We would lay crackers on a cookie sheet, layer slices of cheese and the fried spam on top of the cheese put them in the oven until the cheese melted. It was a great snack or lunch. To make a dinner we would add rice or instant potatoes with a vegie of choice. Bologna and mashed potato cups are good too. When the cupboards ran thin I would eat saltines and butter. A sweet treat that is probably very unhealthy is the Ritz cracker fake apple pie. Now that is a treat everyone should try at least once in their life. When I moved from foster home to foster home the Ritz cracker recipe made an appearance. It was always a hit.
