1 bag of course shredded slaw mix. The one with carrots and purple cabbage make an attractive dish. Because this cut by machine you will have some large flat pieces, I go through it and pick those out and chop them up.
½ purple onion, more to taste.
1 Red Bell Pepper diced
1/2 cucumber peeled, split in half and sliced
Start off with ½ cup Dukes Mayonnaise in a large bowl
Add 1 tablespoon apple cider Vinegar
¼ teaspoon kosher salt
½ teaspoon coarse black pepper
1 tablespoon lemon juice
Whisk the ingredients then add the bag of slaw if it happens to be drier than you like
add more mayonnaise.
If you want a more festive slaw do this recipe and add the following:
Broccoli crowns shopped
Honeycrisp apple diced
Finely diced jalapeno
Use them all or pick the ones you like.
If your local grocer does not carry Duke’s Mayonnaise check Amazon. I assume you could use another mayonnaise, But results may vary.
Under no circumstances whatsoever should you attempt to use Salad Dressing, I cannot imagine what catastrophic thing might happen.

My mother loved slaw. We had it weekly. She chopped it by had with a had held round blade device. She was team Hellmans all the way, I’m not sure they sold Dukes in Greensboro, NC in the 60’s, ha ha.

Good morning lamar! As a fellow Southerner I can appreciate your love for coleslaw. I’ve never put the cucumbers in it, but I do love a good cucumber salad in the summer so I’ll try that. Just FYI I’m sure you’ve done this a big pot of pinto this weekend. Nothing is better than a bowl of pinto chopped up sweet onion , corn muffin and a spoon of coleslaw on top Yum Yum
